Mushroom Quinotto
Ingredients:
- Cooked quinoa
- Olive oil
- Onion
- Cilantro
- Garlic
- Habanero pepper
- Aji amarillo pepper paste
- Mushrooms
- Stock
- Butter
- Soy sauce
- Parsley
- Fresh cream
- Lime juice
Preparation:
- In a pan, pour olive oil, and sautee onion, cilantro, garlic, habanero pepper, aji amarillo pepper paste, mushrooms, stock, soy sauce and butter.
- In another pan, add 3 tbs of cooked quinoa and stock and bring it to a boil. Reduce heat and add fresh cream, parmesan cheese and lime juice.
- Serve the quinoa mix topping with the dressing.
- Top with truffle oil and parsley oil.
- Garnish with parsley leaves
