Mushroom Quinotto


  • Cooked quinoa
  • Olive oil
  • Onion
  • Cilantro
  • Garlic
  • Habanero pepper
  • Aji amarillo pepper paste
  • Mushrooms
  • Stock
  • Butter
  • Soy sauce
  • Parsley
  • Fresh cream
  • Lime juice




  • In a pan, pour olive oil, and sautee onion, cilantro, garlic, habanero pepper, aji amarillo pepper paste, mushrooms, stock, soy sauce and butter.
  • In another pan, add 3 tbs of cooked quinoa and stock and bring it to a boil. Reduce heat and add fresh cream, parmesan cheese and lime juice.
  • Serve the quinoa mix topping with the dressing.
  • Top with truffle oil and parsley oil.
  • Garnish with parsley leaves
