
Roasted Vegetable Quinoa Salad
Ingredients:
- Quinoa
- Diverse vegetables such as carrots, peppers, tomatoes, eggplant, mushrooms, etc.
- Sesame dressing
- Aji amarillo pepper paste
- Lime juice
- Mint leaves
Preparation:
- Roast all vegetables in the oven.
- Mix the sesame dressing with the aji amarillo pepper paste and lime juice.
- Transfer the vegetables from the oven to a hot pot adding some of the dressing.
- In a bowl, mix 3 tbs of boiled quinoa and 1 tbs of crispy quinoa with the dressing and mix everything, including mint leaves, salt and pepper.
- Serve the quinoa mix topping with the vegetables and add the dressing over it.
