Roasted Vegetable Quinoa Salad

Ingredients:

  • Quinoa
  • Diverse vegetables such as carrots, peppers, tomatoes, eggplant, mushrooms, etc.
  • Sesame dressing
  • Aji amarillo pepper paste
  • Lime juice
  • Mint leaves

 

Preparation:

  • Roast all vegetables in the oven.
  • Mix the sesame dressing with the aji amarillo pepper paste and lime juice.
  • Transfer the vegetables from the oven to a hot pot adding some of the dressing.
  • In a bowl, mix 3 tbs of boiled quinoa and 1 tbs of crispy quinoa with the dressing and mix everything, including mint leaves, salt and pepper.
  • Serve the quinoa mix topping with the vegetables and add the dressing over it.
