Quinoa Croquettes
Ingredients:
- Cooked quinoa
- Dijon mustard
- Mashed potatoes
- Mozzarella cheese cubes
- Canola oil
Preparation:
- Mix Dijon mustard, mashed potatoes, and quinoa until well combined.
- Roll mixture into small balls and flatten them.
- Put a small cube of mozzarella cheese into the middle of the flattened ball and then close it before reshaping back into a ball.
- Bread the quinoa balls.
- Fry the quinoa balls in a canola oil or other on medium heat.
- Take out and let breathe.
- Place croquettes together in bowl, squeeze a little lime juice over the top.
- Garnish with mint leaves.
- Finish and enjoy with artichoke dipping sauce, ricotta aioli, or any other dipping sauce you like.
