Quinoa Croquettes

Ingredients:

  • Cooked quinoa
  • Dijon mustard
  • Mashed potatoes
  • Mozzarella cheese cubes
  • Canola oil

 

Preparation:

  • Mix Dijon mustard, mashed potatoes, and quinoa until well combined.
  • Roll mixture into small balls and flatten them.
  • Put a small cube of mozzarella cheese into the middle of the flattened ball and then close it before reshaping back into a ball.
  • Bread the quinoa balls.
  • Fry the quinoa balls in a canola oil or other on medium heat.
  • Take out and let breathe.
  • Place croquettes together in bowl, squeeze a little lime juice over the top.
  • Garnish with mint leaves.
  • Finish and enjoy with artichoke dipping sauce, ricotta aioli, or any other dipping sauce you like.
